Bacon and Brown Rice Soup Recipe

(serves 4)
Ingredients

1 pint bacon stock
75gms (3ozs) brown rice
1/2 red pepper (diced)
50gms (2ozs) sliced mushrooms
2 sticks of celery (chopped)

Method

1. Firstly add the rice and stock to a large saucepan and boil for approx 30 minutes (adding more water if necessary).

2. Add mushrooms, pepper and celery to the saucepan, then boil for a further 10 minutes until the rice is cooked.

3. Taste for seasoning if needed. Serve with crusty bread.
