Chocolate Fudge Cake Recipe
(serves 6-8)
Ingredients
85g dark chocolate (chopped finely)
4 egg whites
2 egg yolks
50g cocoa powder
125ml boiling water
200g brown sugar
300g almond meal
50g wholemeal plain flour
Method
Place cocoa powder, dark chocolate and sugar in a large bowl, add the boiling water. Mix ingredients until it's smooth. Next start whisking the mixture and slowly add in the egg yolks, then the almond meal, then flour. In a separate bowl whisk the egg whites until they form firm peaks. Slowly fold the egg whites into the chocolate mix (do not whisk). Pour the chocolate mixture into a round baking tin (which is greased / has baking paper on already) and bake for around 35-40 minutes on 180. Once the cake is cooked allow the cake tin to cool before removing the cake. This cake can be served with either low fat ice cream, creme fraiche or whipped cream, whatever you desire.
