Curried Onion Soup Recipe

(serves 3-4)
Ingredients

1oz butter
2 sliced onions
1/2 teaspoon curry powder
750mls beef stock
4ozs chopped mushrooms
2ozs chopped walnuts
salt / pepper

Method

1. Melt the butter in saucepan and fry the sliced onions until they are dark brown.

2. Stir in the curry powder, salt and pepper, then add the stock.

3. Simmer for 40 mins then add the mushrooms and walnuts. Cook for 5 more minutes. Serve hot or cold.

*For an alternative recipe, when frying onions add 8ozs minced beef or add 4ozs rice to the stock.
