
Curried Prawns with Vegetables Recipe
1kg green king prawns
2 red peppers (cut into strips)
60g butter
250g broccoli florets
1 small cup of coconut cream
1 medium cup of water
1 tablespoon curry paste
2 thinly sliced carrots
1. Peel and devein the prawns, then melt the butter in a saucepan.
2. In the pan add the sliced red peppers, sliced carrots and cook over low heat for 5 minutes.
3. Add the broccoli florets, coconut cream, curry paste and water, bring to the boil, reduce heat then simmer, covered for 5 minutes or until broccoli is tender.
4. Add prawns and stir over the heat for around 1-2 minutes or until tender.
5. Serve on a bed of rice.
