Fruity Bread and Butter Pudding Recipe
150ml skimmed milk
400ml half-fat coconut milk
25g muscovado sugar
2 medium eggs
160g mixed dried fruit
4 slices fresh white or brown bread
3tsp low fat butter
1 tbsp flaked almonds
1. This is a good recipe for Christmas. Firstly preheat your oven to 180C/Gas Mark 4. Lightly grease a 1.2litre ovenproof dish with the low fat butter.
2. Spread the remaining butter over the sliced bread. Cut the bread into triangles then place in the bottom of the dish.
3. Chop up any big pieces of the dried fruit, sprinkle the fruit over the bread with the muscovado sugar.
4. In a bowl beat the eggs, coconut milk and skimmed milk together then pour over the fruit and bread. Leave to stand for around 15 – 20 minutes then sprinkle the flaked almonds on top. Place the dish in a roasting tin and pour boiling water round (in the roasting dish) so it comes half way up the side of the dish.
5. Cook for around 30-35 minutes or until the top is nice and golden in colour. Great served with hot custard.
