Greek Meatballs Recipe
5 oz minced lamb
1 tbsp olive oil
2 crushed garlic cloves
zest of 1 medium orange
1 jalapeno pepper, seeded / sliced
2 tbsp freshly chopped mint
1 large shallot, chopped finely
Greek or natural yoghurt (optional)
salt & pepper
1. To make this quick free lamb recipe simply heat a medium sized frying pan over a medium heat, then add the olive oil, jalapeno pepper, shallot and garlic. Cook for 2 minutes then let it cool.
2. In a large bowl break up / crumble the lamb mince, add the orange zest and fresh mint, season with salt and pepper. Next add the cooled garlic mixture from the frying pan. Combine the mixture well.
3. Form the mixture into 1 inch balls and transfer to a plate.
4. Heat a large frying pan over a medium to high heat and place the meatballs in the pan (if need be, cook the meatballs in two batches if all of them won’t fit in the pan). Cook for 8-10 minutes until cooked through.
5. The meatballs can be eaten straight away (great if dipped in Greek Yoghurt) or you can let them cool, then refrigerate until needed. This mixture will make around 18-20 meatballs.
