
Ground Beef Casserole Recipe
1 pound ground beef, lean
1/2 cup chopped onion
4 tomatoes, sliced
2 green bell peppers, sliced
2 tablespoons butter
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
2 cups fresh cut corn or frozen, thawed
1/2 cup soft breadcrumbs
1. In a large skillet / frying pan melt the butter then add the onions and peppers and cook until soft and browned.
2. Add the ground beef to the pan, breaking up with a fork. Cook beef until no longer pink. Season with salt and pepper.
3. In a greased 2-quart casserole, layer half of the corn, half of the meat, and half of the sliced tomatoes.
4. Repeat layers then top with breadcrumbs. Bake at 350° for around 30-40 minutes.
