Neapolitan Tomato Sauce Recipe
(serves 5-6)
Ingredients
2 1/4 lbs ripe tomatoes, peeled, deseeded, chopped
6-8 fresh basil leaves
3 fl oz (90ml) extra virgin olive oil
2 cloves garlic, crushed
salt and pepper
Method
1. Heat the olive oil in a large saucepan, add the garlic and fry gently for a couple of minutes.
2. Add tomatoes and fry, stir constantly for 5 minutes, allowing just the excess liquid to evaporate.
3. Add the fresh basil, salt and pepper to taste.
4. Serve the sauce over a plate of spaghetti or dish of your choice.
