Quick Fish Cocktail Recipe

(serves 4)
Ingredients

100gms (4oz) cooked shelled prawns
95gms (4oz) can of drained crab meat
2 large lemons
2 inch piece of diced cucumber
1/2 tbsp chopped dill
dill and salad leaves to garnish

Method

1. First cut lemons in half lengthways. Hollow out each half so that you are keeping the outer lemon only, put the inner of the lemon in a bowl taking out the pips.

2. In a bowl add the prawns, crab meat, cucumber, mayonnaise and dill. Stir very well.

3. Finally spoon the mixture in the bowl into each lemon shells and serve garnished on a plate with dill and salad leaves. Simple and easy!
