275g long grain rice

Button Mushroom Rice

Method
To make this button mushroom rice recipe start off by melting the butter in a large frying pan, add the mushrooms, lemon juice and rind (season with salt and pepper if you wish), add the rice and stir. Cook for 3 minutes stirring constantly. Next add the water to the pan and bring it all to the boil, reduce heat and simmer for 20-25 minutes until rice is soft and tender and water all absorbed. Stir the cheddar cheese into the rice and serve at once. If you wish, place a sprig of parsley on top when serving. A simple, cheap and quick rice recipe.
