Simple Carrot and Parsnip Bake Recipe
225gms (8oz) fresh carrots
225gms (8oz) parsnips
25gms (1oz) wholemeal breadcrumbs
25gms (1oz) light brown sugar
1 tbsp clear honey
1 tbsp freshly chopped coriander
3 tbsp orange juice
1. Preheat over to gas mark 5 / 190C / 375F.
2. Peel carrots and parsnip, cut into thin strips. Boil lightly in slightly salted water for around 10 mins. Drain and transfer to a buttered ovenproof dish.
3. Mix the sugar, orange juice and honey together. Pour over carrots and parsnips so all vegetables are coated well.
4. Mix breadcrumbs and coriander together, sprinkle over vegetables. Bake for approximately 25-35 minutes until soft. Serve as a side dish.
