750mls beef stock
4ozs chopped mushrooms
2ozs chopped walnuts

Curried Onion Soup
(serves 3-4)

Method
Melt butter in saucepan. Fry onions till dark brown. Stir in curry powder, salt and pepper, then add stock. Simmer for 40 mins then add mushrooms and walnuts. Cook for 5 more minutes. Serve hot or cold. *For an alternative recipe, when frying onions add 8ozs minced beef or add 4ozs rice to the stock.
