Jumping Jambalaya Recipe

(serves 4)
Ingredients

500g cooked diced turkey
2 tbsp olive oil
300g chopped bacon
1 large onion (finely chopped)
1 green pepper (cut into chunks)
200g brown uncooked rice
200g chopped celery
700g passata (tomato sauce)
1/2 tsp Worcester sauce
1/4 tsp cayenne pepper
600ml chicken stock
sprig of fresh parsley

Method

In a frying pan, heat the oil, then cook the onion, bacon, celery, pepper and garlic until soft. Next add the rest of the ingredients (except for the turkey). Bring to the boil, lower the heat and simmer for 20-25 minutes (until rice is cooked). Finally add the cooked turkey to the pan and cook for another 5 minutes. Serve and enjoy it to the full!

Bacon and Brown Rice Soup

(serves 4)
Ingredients

1 pint bacon stock
75gms (3ozs) brown rice
1/2 red pepper (diced)
50gms (2ozs) sliced mushrooms
2 sticks of celery (chopped)

Method

Add rice and stock to saucepan and boil for approx 30 minutes (adding more water if necessary). Add mushrooms, pepper and celery then boil for a further 10 minutes until rice is cooked. Taste for seasoning if needed. Serve.

Tasty Bacon and Potato Salad Recipe

(serves 4)
Ingredients

1lb new potatoes
4 slices of back bacon
bunch of fresh spring onions (chopped)
pinch of salt
2 tbsp red wine vinegar
3 tbsp olive oil
1 tsp mustard
1 tbsp freshly chopped mint

Method

Make the dressing first by mixing the red wine vinegar, olive oil, mustard and mint in a small bowl, mix well. Next, boil potatoes in salted water until tender, drain. Cook bacon under a grill until crisp, then chop into small pieces. Add the bacon and spring onions to the hot potatoes. Pour dressing over the potatoes, bacon and onions and toss well. Serve either hot or cold. Delicious.

Cream Cheese & Bacon Bagels Recipe

(serves 4)
Ingredients

4 bagels all sliced in half
4 good slices crispy bacon
8 oz cream cheese
4 thick slices of tomato
salt and pepper
1 tsp whole milk

Method

In a bowl or food processor add the cream cheese, milk and salt and pepper. Mix well. Break / crumble the bacon slices and mix into the cheese. Toast bagels, spread with the cream cheese and bacon, and top them off with a slice of tomato. Simple.
