Crispy Plaice Fillet Recipe

(serves 2)
Ingredients

2 medium sized fresh plaice fillets
1 large free range egg
1 small baguette
4tbsp plain flour
2 tbsp olive oil
Mixed salad to serve

Method

Firstly grate the baguette or put in a food processor to make your breadcrumbs. Next put the flour, egg and breadcrumbs all in separate dishes. Dip the plaice in the flour, then the egg and finish with the breadcrumbs and make sure the fish is well coated. Put oil into a frying pan and once hot enough, shallow fry each plaice fillet for 2-4 minutes each side. Remove from pan and drain on kitchen paper. Serve with mixed salad. Very simple and quick.

Warm Pesto & Cheese Baguette Recipe

(makes 12)
Ingredients

1 small baguette / baton
12 fresh cherry tomatoes
50g pesto
100g of your favourite cheese spread
Ground black pepper

Method

Preheat oven to 200C. Cut the ends of the baguette, then cut the bread into 12 slices, place on a baking sheet. Spread each slice of bread with the pesto, followed by the cheese spread. Half the tomatoes, then place the 2 halves on top of the pesto / cheese slice. Bake in the preheated oven for approximately 8 minutes or until the underside of the bread is cooked. Tasty.
