Spicy Mince Balls Recipe

(makes approx 10)
Ingredients

400g minced beef
1 tsp olive oil
1 beef stock cube (eg Oxo)
6 drops of Tabasco hot sauce
pinch of dried parsley
salt & pepper

Method

Preheat grill to medium. In a large bowl place the minced beef, tabasco sauce, oil and parsley together. Crumble the stock cube in. Add a little salt and pepper, then mix the ingredients together well. Divide mixture into 10, then roll each individual section into a round ball, repeat process until all mixture if used up. Place in a heat proof container or on tinfoil and cook under the grill for approx 10-15 mins turning often. Serve once juices run clear. Enjoy!

Blushing Tuna Tomatoes Recipe

(serves 4)
Ingredients

198g (7oz) can of tuna in oil, drained
8 fresh ripe tomatoes
5 tbsp low-fat mayonnaise
3 drops Tabasco sauce
1 tbsp stuffed olives, chopped
2 tsp lemon juice
8 small sprigs fresh parsley
salt and pepper

Method

Slice the tops off all tomatoes (keep the tops to one side). Scoop out the seeds from the tomatoes and discard. Season inside the tomatoes with the salt and pepper. In a bowl mix together the mayonnaise, stuffed olives, tuna, lemon juice and Tabasco sauce, mix well. Next divide tuna mixture between each of the tomatoes cases and fill each one well. Place the lids back on the tomatoes, press down gently to hold together. Garnish each tomato with parsley on the top. These are great served with any salad or can be eaten just by themselves. Fast and simple.

Saucy Chicken Drumsticks Recipe

(serves 4)
Ingredients

8 free range chicken drumsticks
1 tbsp olive oil
2 tbsp Worcestershire sauce
2 tbsp tomato sauce
4 drops of Tabasco sauce

Method

Preheat your oven first to around 180C. In a bowl mix the sauces and olive oil together, mix well. Next place the chicken drumsticks on a baking tray (which is covered in foil) and coat the chicken with the sauce. Place in the over and bake for approx 40 or until cooked. Delicious eaten hot or cold.
