Tantalising Tomato Salad Recipe
(serves 3-4)
Ingredients
4 large organic tomatoes
250gms cherry tomatoes
1 1/2 tablespoons of balsamic vinegar
1 crushed clove of fresh garlic
3 tablespoons extra virgin olive oil
1 handful chopped fresh basil
Method
1. Cut the 4 large tomatoes into quarters and halve the cherry tomatoes.
2. Place the tomatoes into a bowl with the crushed garlic and chopped basil.
3. Add the vinegar and olive oil and mix for approx 1 minute. Cover the bowl and let it sit in the fridge for around 1 hour as this will increase the flavours. Serve when ready.
