
Tasty Banana Bread Recipe
- 2 medium sized eggs
- 120g light brown sugar
- 3 medium sized ripe bananas, mashed well
- 50g chopped dates
- 285g plain wholemeal flour
- 100ml semi skimmed milk
- 1 tablespoon honey
- 1/2 teaspoon bicarbonate of soda
- 1/2 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 tablespoon vanilla extract
- 1/2 teaspoon salt
1 Preheat oven to 170C / Gas Mark 3 / 325F.
2 In a large bowl beat the eggs and sugar together until thick and light, will take around 5 minutes.
3 Next, mix in the bowl the mashed bananas, milk, honey, dates and vanilla extract. Sift the flour, cinnamon, ground ginger, baking powder, bicarbonate of soda and salt over the mixture and stir until combined.
4 Pour the mixture into a non-stick loaf tin and place in the oven on the middle shelf for around 1hr. The bread needs to be cooked until it is golden brown on top.
5 Turn the bread out onto a rack to cool before you tuck in and enjoy it.
