
Tasty Turkey Curry Recipe
500g cooked diced turkey
2 tbsp medium curry powder
1 large onion (finely chopped)
3/4 pint chicken broth
2 tbsp lemon juice
1 small can crushed pineapple (keep juice)
1/2 tsp ground ginger
4 tbsp butter
hot cooked rice
1. In a large frying pan / skillet melt the butter, then add the curry powder and stir for approx 2 minutes.
2. Next add onions and keep stirring until the onions are golden and soft.
3. Add the flour, ginger, broth and pineapple to the pan and stir well. Heat the ingredients until they boil, then simmer for around 5 minutes.
4. Add the cooked turkey and simmer for a further 10 minutes until all heated well. Finally just before serving, stir in the lemon juice.
5. Place hot cooked rice on a plate and serve the tasty turkey curry on the side. Quick and delicious!
Had this tonight. Very tasty and easy to prepare and cook. Goodness knows where the pineapple goes though!!
