Grilled Vegetables with Feta Cheese Recipe
(serves 6 as a side dish)

Method
This quick free grilled vegetable and feta cheese recipe is perfect as a side dish for your main meal. Firstly cut aubergines lengthways into 5 thick slices and cut each courgette into 4 long slices. Brush all slices with oil on both sides. Grill on a baking tray until golden and soft. Once they are cooked place them on a plate in a pile and sprinkle with the toasted pine nut and feta cheese. Simple yet tasty!
